Neighborhoods of clean and exquisite establishments: Nihonbashi Ningyo-cho Area

Edo (Tokyo in feudal times) grew up around the palace of the Tokugawa Shogunate. Our part of town, where the establishments belonging to the Nihonbashi Hisamatsu Restaurant Cooperative are open for business, was the first to become known for entertainment. The fish market raised the first din in the morning. Meals were partaken across a spectrum of eateries, from quick-bite stalls to upscale private dining. Daily and nightly, puppet theaters, playhouses, performers of illusion and aquatic display, plus the Yoshiwara night scene created a perpetual ambience of a large festival. Nearly 300 years of peace continued in the Edo Period, whose cuisine benefited from the development of broth from dried bonito flakes, local soy sauce and sweet seasoning sake. These ingredients established the delicious “salted and sweetened” taste that has driven Japanese “soul food” for four-hundred years—from the Samurai times up until present-day Tokyo. Our flavors and techniques thrive in the cuisine we continue to serve.
